After much anticipation, planning, and speculation, we are finally into the sugarin’ season. We’ve got both maple syrup and walnut syrup boiling in our new sugar shed. Thanks to help from friends and family, we’ve managed to keep the evaporator steaming around the clock. The sap has flowed generously and it looks like we’re on track for 100+ gallons of maple and at least 10 gallons of walnut syrup.
Just a few more weeks until springtime rolls in and the trees will put their sap into their leaves instead of our evaporator.
